This recipe was a huge favourite in our cafe and is a based on recipe from a dear friends of mine Andrea.
RAW CHOCOLATE CRACKLES
- 1 C activated buckinis (activated buckwheat)
- 1/3 C desiccated coconut
- 1/2 C melted coconut oil
- 1/3 C goji berries
- 1/3 C pepitas
- 4 T cacao powder
- 4 T agave nectar, coconut nectar, rice malt syrup or sweetener of choice
- 1 tsp vanilla essence or scraped insides of 1 vanilla bean (optional)
C = Cup / T = tablespoons
Mix all ingredients together in a large bowl
Spoon into small patty pans or cools slightly and roll into ball
Dress the tops with goji berries, pepitas or flaked coconut
Store in the freezer for up to 3 months or keep in the fridge for 7 to 10 days
*** NOTE- As the crackles are raw if left out of the fridge for long periods they can melt!
