This Healthy Crackles recipe was a huge favourite in our cafe and is based on a recipe from a dear friend of mine Andrea.
RAW CHOCOLATE HEALTHY CRACKLES
INGREDIENTS – VERSION ONE
- 1 C activated buckinis (activated buckwheat)
- 1/3 C desiccated coconut
- 1/2 C melted coconut oil
- 1/3 C goji berries (change up to other dried fruits, flowers or leave out)
- 1/3 C pepitas (can also use sunflower seeds, shredded coconut, cacao nibs, nuts etc)
- 4 T cacao powder
- 4 T agave nectar, coconut nectar, rice malt syrup, maple syrup or sweetener of choice
- 1 tsp vanilla essence or scraped insides of 1 vanilla bean (optional)
INGREDIENTS – VERSION TWO
- 1 C activated buckinis (activated buckwheat)
- 1/3 C desiccated coconut
- 1/2 C melted coconut oil
- 1/3 C shredded coconut
- 1/3 C pepitas or nuts
- 4 T cacao powder
- 4 T agave nectar, coconut nectar, rice malt syrup, maple syrup or sweetener of choice
- 12 drops peppermint or orange oil
C = Cup / T = tablespoons
METHOD
Mix all ingredients together in a large bowl.
Spoon into small patty pans or cools slightly and roll into ball.
Dress the tops with goji berries, pepitas or flaked coconut.
Store in the freezer for up to 3 months or keep in the fridge for 7 to 10 days.
*** NOTE: As the crackles are raw if left out of the fridge for long periods they can melt!
